Welcome to the Star 36 Bakery Co. web site. I am dedicated to making fresh, quality old-fashioned products like my mom made for me as after school snacks in the 1960’s and early 70’s. My products are made in small batches either by hand or with the help of a small 5-quart mixer. My sourdough muffins are completely hand mixed. No machine can duplicate the gentle hand-folding technique which gives a superior final product.
I believe in using quality ingredients to make quality products. My bakery is ruled by quality, not by a team of “cheaper is better” accountants. I like to use butter and canola oil, not some factory concoction of partially hydrogenated palm oil. I don’t even know where to buy the stuff and don’t care to find out. I like to use sugar and honey, not high-fructose corn syrup. A spoonful of corn syrup is useful to control sugar crystal formation, but corn syrup is not an acceptable sweetener. Since I am making things the old-fashioned way, I don’t need to add a bunch of chemicals to help move products through a $10,000,000 fake-food-factory as fast as possible. Because my locally-made fresh products are baked and delivered on the same day, there is no need for preservatives.
I am willing to take the time to let flavors and textures develop naturally. As an example, I saw on a TV documentary that one brand of factory pretzels take less than an hour from start to finish packaging. My pretzels take approximately 27 hours from start to finish. I feel this gives them 27 times the flavor of “factory” pretzels.
I use genuine Northeast Nevada Sourdough Starter in many of
my recipes. San Franciscans like to brag about their sourdough,
and it is good, but ours has its own special flavor that is
uniquely Nevada.

a reminder of the pioneers, prospectors, ranchers, and sheepherders
that helped to settle and create the great state of Nevada.
Eating history is much more fun than studying a text book in
school. If a history teacher is reading this and is offended,
please accept my apologies, but I stand by my statement.
